Banneton is a type of basket which used to provide structure for shaped loaves of bread during proofing. Banneton is also known as Brotform or bread proofing baskets, proving basket. It is normally used for doughs that are too soft and wet to maintain their shape while rising.

- Only use for proofing and forming bread dough; not to be used in the oven.
- Handle the floured basket gently (tapping as you might a greased/floured bread tin will result in too much of the flour coming off)
- Flour the banneton before using.
- If the dough does not release easily, flouring may have been insufficient. For very wet (“high-hydration”) doughs, you should consider purchasing one of the knitted cotton liners inside the banneton
